Hello, hello! Well, this was a week for the record books for many of you, I am betting. What a weather week it has been for a lot of the United States. Our weather prediction was a bit anticlimactic and we didn’t even get a bit of the predicted snow. I know my kids were crossing their fingers for a snow day that never came. How has your week been?

Ready for some fun finds? I am making the chai concentrate from Fed and Fit this weekend. We have several chai drinkers in our home and I can’t wait to try it both hot and cold. I also found a beautiful makeup tutorial from The Small Things Blog. We had a winner of a dinner with the delicious cheesy chicken and rice casserole from The Real Food Dietitians – nutritious comfort food at it’s finest. I love pretty much every recipe from Cassy over at Fed and Fit, so I knew that when I saw this chai concentrate recipe, I had to make it. I am planning on making a batch this weekend and can’t wait to try it both hot and iced.

I am a Midwest girl at heart so casseroles have always held a special place in my heart. If you know, you know! Anyhow, this cheesy chicken and rice casserole from The Real Food Dieticians was so good and loved by every member of our family. ps – I would recommend par-cooking the rice to ensure that it fully cooks 🙂
